Cocoa Butter

The Cocoa Tree is a small evergreen tree that is native to the tropical regions of Mexico. It grows only along the Equator in Africa, Asia and America. On the trucks of the tree and on its older branches grow small flowers; white flowers are female, while the pink flowers are male, these flowers get pollinated by small flies and some develop into fruits.

The Cocoa plant produces its fruit as oval pods that turn either yellow or orange when ripe, it takes about 6 months for the pods to ripen. Inside the pods are about 20 to 60 seeds that are covered in pulp, the seeds are often called Coco Bean. It is from the seeds that Cocoa Butter and Chocolate are produced.

Cocoa Butter is an edible fat from the cocoa bean, it is a pale-yellow fat that melts upon contact with the skin, and has a pleasant aroma - like chocolate :)
To produce Cocoa Butter, the Cocoa Beans are removed from the pod and allowed to ferment, turning from gray to brown, then purple, and form their unique aroma, the fermentation naturally strips off the pulp from the seeds. They are then dried in the sun for about six days, then roasted and pressed to extract the fat known as Cocoa Butter. The remnant from this is used to produce Cocoa Powder. The pulp is used in some countries to produce smoothies or juice. About 10 kilograms of cocoa beans are needed to produce 1 liter of cocoa butter!

To make chocolate, milk and sugar may be added to Cocoa Butter as well as other ingredients, but sometimes no milk or sugar is added to produce dark and unsweetened chocolate.

Cocoa Butter is used in cooking, production of skincare products as well as to make capsule for medicine. It is also the major ingredient in chocolate. The Aztec used Cocoa as their currency.
